LAGOON CHICKEN SALAD 
2 whole chicken breasts
1 1/2 c. unsweetened apple juice
3 c. cooked wild rice
1 1/2 c. seedless grapes, halved
1 c. chopped unpeeled apple
1/2 c. chopped celery
3/4 c. slivered almonds, divided
1/2 c. chopped water chestnuts

Bone and skin chicken breasts. In saucepan place chicken; add apple juice and cook over medium heat about 15 minutes or until a fork can be inserted in chicken with ease. Remove chicken; dice and chill.

Cook wild rice according to package instructions. Gently toss together chicken, wild rice, grapes, apple, celery, and 1/2 of the almonds. Add water chestnuts and dressing. Cover and chill about 30 minutes to blend flavors. Serves 4.
