CHICKEN CORDON BLEU | |
6-10 pieces boneless chicken breasts 1 lg. pkg. ham slices 1 pkg. sliced Swiss cheese 2-3 eggs, well beaten 1 c. flour 1/2 tsp. salt 1/2 tsp. pepper 1 1/2 c. bread crumbs Using a meat mallet, thin out each chicken breast. Use 1 piece ham and 1 slice Swiss cheese and 1 chicken breast; roll together with ham and cheese being in the center. Place chicken roll in flour, salt and pepper mixture, then place in egg mixture. Finally roll in bread crumbs and place in large pan. Bake at 350 degrees for 30 to 35 minutes turning chicken rolls half way through cooking time. Cover with foil for the last 15 minutes of baking. The pan should be thoroughly sprayed with Pam or use 3 tablespoons oil. For extra taste, add cooking sherry, about 1/3 cup into baking pan. |
