CHRISTMAS PUDDING 
2 c. brown sugar, packed
1 stick butter
1 1/2 c. boiling water
1/2 c. milk
2 tsp. baking powder
1/2 c. raisins
1 c. flour
1 tsp. vanilla
1 c. walnuts, chopped

Soak raisins in hot water to cover for 15-20 minutes. Put 1 cup brown sugar, 1 1/2 cups boiling water and 1/2 stick butter into the bottom of a 2 quart casserole. Set aside.

Cream together in a large bowl 1 cup brown sugar and 1/2 stick butter. Add milk, flour, baking soda, vanilla and drained raisins. Add nuts. Place this mixture in the center of the liquid in the casserole. Do not spread around! Bake uncovered at 350 degrees for 1 hour. Serve either warm or cool with whipped cream or Cool Whip.
