GOLDEN POTATOES 
7-8 lg. potatoes
1/2 c. butter (or less)
1 1/2 c. shredded cheese
1 tsp. chopped onion
1 1/2 c. sour cream
Salt & pepper

Boil, then simmer potatoes until almost done. Drain and dice. Put potatoes into casserole with remaining ingredients. Toss lightly. Bake 45 minutes at 350 degrees. Serves 8. Dish can be assembled day before, then baked before serving.
