EGG FOO YUNG 
4 eggs, well beaten
1 lb. bean sprouts or 1 can
1/8 tsp. soy sauce
Salt, pepper
1/3 c. chopped green onions

Mix together. Coat pan with oil; heat. Pour into pan to form small patties. Brown both sides. Left over cooked meat or crisp raw vegetables may also be used.
