SOLE PARISIENNE 
1 (6 oz.) fillet of sole
1/2 tsp. vegetable oil
1 tbsp. mayonnaise
1 tsp. Dijon mustard
1 tsp. grated Parmesan cheese

Heat oven to 450 degrees. Rub both sides of fish with oil. Put fish, skinned side down, on baking sheet and bake about 3 minutes, until nearly done. Mix remaining ingredients in a small bowl. Remove fish from oven; turn on broiler. Spread fish with mayonnaise mixture. Broil 4-6 inches from heat 1-2 minutes, until brown; watch carefully.
