APPLE SQUARES 
1 1/2 c. lard
4 1/4 c. flour
3 egg yolks
2 tbsp. lemon juice
1 tsp. salt
Water
Sliced apples
1 1/4 c. sugar
2 tbsp. flour
Cinnamon

Mix lard, flour and salt as for pie crust. Beat egg yolk and 1/2 cup water, lemon juice with fork. Add to the flour mixture. Add water for the right consistency for rolling. Roll half of the dough to line bottom and up the sides of a jelly roll pan. Put on apples that have been mixed with sugar, flour and cinnamon. Dot with butter. Roll remaining dough for top crust. Tuck bottom crust over top crust and seal. Slit top of crust. Bake at 400 degrees for 15 minutes, turn oven down to 350 degrees and bake for an additional 40 minutes or until golden brown. When still warm glaze with powdered sugar glaze.
