EASY CARROT CAKE 
3 eggs
1 1/2 c. oil
2 c. flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
2 c. sugar
3 c. packed carrots, grated and peeled
1/2 c. chopped walnuts
1/2 c. raisins

Beat together eggs and oil. Mix dry ingredients and then add to egg and oil mixture. Fold in carrots, nuts and raisins. Pour into prepared 13 x 9 x 2 inch pan. Bake at 350 degrees for 40 minutes or until cake pulls away from sides of pan. Cool and frost in pan.
