LOVE'S CARROT CAKE 
2 c. flour
2 tsp. baking soda
2 tsp. salt
2 tsp. cinnamon
2 c. of sugar
4 eggs
1 1/4 c. of oil
2 c. grated carrots, about 5
8 1/2 oz. can crushed pineapple
1 c. nuts, chopped

Sift together flour, soda, salt, and cinnamon. Add sugar, oil and eggs. Mix well. Mix in carrots, pineapple, and nuts. Bake in 3 layer pans, greased and floured, or one 9 x 13 pan, at 350 degrees for 35 to 45 minutes. Frost with cream cheese frosting.

CREAM CHEESE FROSTING:

1/2 c. butter
8 oz. cream cheese
1 tsp. vanilla
1 lb. powdered sguar

Cream butter with cream cheese and vanilla. Beat in powdered sguar. This makes a lot of frosting.
