RED VELVET CAKE | |
1/2 c. shortening 1 1/2 c. sugar 2 eggs 2 1/4 c. flour 1 tsp. salt 1 c. buttermilk 1 tsp. vanilla 2 oz. red food color 2 tsp. cocoa 1 tsp. baking soda 1 tsp. vinegar Cream shortening and sugar. Add eggs and vanilla and mix well. Mix coloring with cocoa and add to shortening and sugar mixture. Sift flour and salt together. Add buttermilk and flour in 3 steps, beginning with buttermilk. Mix soda and vinegar and add to batter. Pour into 2 greased and floured cake pans. Bake at 350°F until done. Frost with following frosting. Marshmallow Frosting: 1 c. sugar 1/2 c. light corn syrup 4 tbsp. water 4 egg whites 2 tbsp. vanilla Combine sugar, corn syrup and water in small pan and heat over medium heat until it reaches rolling boil and rolls off spoon in string. Beat egg whites until stiff and add mixture to egg whites; beating at high speed. Add vanilla. This looks real pretty. This cake is a deep red, and the frosting is bright white. |
