NEW ZEALAND PAVLOVA | |
3 egg whites, sometimes more 9 oz. castor sugar or very fine granulated sugar 1 tsp. vanilla 1 tsp. vinegar Pinch of salt Beat whites until quite stiff. Fold in sugar. Add vanilla and vinegar. Place on greased paper on greased tray and bake very slowly, about 1 to 1 1/2 hours at 250 degrees. Pile high whipped cream and chopped fruit (sliced peaches or rounds of kiwi fruit) on top. Very sweet. NOTE: Put onto sheet like one large cookie. Make a little well in center so it rises evenly. The vinegar is used to stop it from cracking, but if it does you can cover it up with whipped cream. Put quite a lot of fruit on top. |
