CHICKEN PROSCIUTTO 
4 boneless, skinless chicken breasts
2 tbsp. flour
Salt & pepper
4 tbsp. butter
4 slices prosciutto ham, thinly sliced
4 oz. sliced mozzarella cheese
3/4 c. chicken broth
1/2 c. dry white wine

Flatten chicken breasts. Dust with flour, salt and pepper; saute slowly in butter until brown on both sides. Place slice of ham on top of each breast and cover each with a slice of cheese. Add broth to pan and cook until reduced by half. Add wine and reduce again. Cook 45 minutes to an hour. Serve with sauce from pan. Serves 4.
