CRUDITE'S WITH PEANUT BUTTER DIP | |
1 med. carrot, matchstick strips 1 med. celery stalk, matchstick strips 8 snow peas or green beans 3 sm. radishes 1/2 med. banana, peeled 1 tbsp. peanut butter 1/4 c. unsweetened apple juice 1 tsp. lemon juice Wrap carrot, celery, peas, and radishes separately. Refrigerate. Place banana, peanut butter, apple juice, and lemon juice in blender. Whirl 10 to 15 seconds until smooth. Pour into small container. Place wax paper over dip to prevent discoloring. Cover with lid. Refrigerate until ready to pack lunch or serve. Serves 1 child (for adults, use low sodium peanut butter). 230 calories, 9 g fat, 0 cholesterol, 71 mg sodium. |
