GREEK MEATBALLS 
1 - 1 1/2 lbs. ground beef, turkey or sausage
1 med. grated onion
1 med. grated potato
1 egg
1 slice bread, soaked in water & squeezed out
1 tbsp. oregano
1 tbsp. thyme
1 tbsp. parsley

Mix all together by hand. Form into approximately 8 "football" shaped loaves. Fry in shallow oil or broil 20 minutes, browning on all sides. Serve with "Green Rice".

GREEN RICE:

1 (10 oz.) pkg. frozen chopped spinach
1/2 pkg. dry Ranch dressing
4 servings instant rice
2 tbsp. lemon juice
2 tbsp. butter

Cook spinach and rice as directed, separately. Add Ranch dressing mix; lemon juice and butter. Mix well.
