HARVARD BEETS 
2 tbsp. butter
1 tbsp. sugar
1/4 tsp. salt
1/3 c. mild vinegar
2 c. cooked beets
1 tbsp. cornstarch

Melt butter, add cornstarch, sugar, salt and blend well. Add vinegar and cook until thick. Add beets and heat thoroughly.
