SHRIMP OR CRAB BISQUE | |
1 3/4 lb. cooked & prepared shrimp or 1 lb. crabmeat 1/4 c. chopped onion 1/2 c. chopped celery 2 pods crushed garlic 1 cubed potato 1/4 c. butter 1 qt. milk 2 tbsp. flour 1/4 tsp. pepper 1 tsp. salt 1 tsp. dried parsley Cook onion, celery and garlic in the butter. Blend in the flour; add milk and seasonings. Stir until thickened, then add shrimp or crabmeat and potato. Simmer for 15 minutes (low heat) or until shrimp or crabmeat is heated through. Sprinkle parsley on top and serve with croutons. |
