CHEESE IN 90 MINUTES | |
1 gal. milk 1 qt. buttermilk 1/2 rennett tablet 1 yellow color tablet Seasonings (optional) : peppers, chopped fine, onion powder, garlic powder caraway seed Pour milk and buttermilk into pot. Bring to 94 - 95 degrees, then add 1/2 rennett tablet dissolved in 1/4 cup water to 94 - 95 degree milk. As it heats it will firm like Jello. While in pot cut into 1 inch strips and then across to form 1 inch cubes, then cut on an angle. Let it stand 20 minutes until whey comes out watery at 150 degrees. Drain into cheesecloth, add seasoning, tie cloth and place into pan with pan on top to weight down; refrigerate. Makes 1 large ball or 2 -3 round balls. |
