SPICED WATERMELON RIND 
1 1/2 lb. white portion of watermelon, cubed some pink
2 1/2 c. sugar
1 c. cider vinegar
1/2 c. water
1/2 tbsp. whole cloves
1/2 tbsp. whole allspice
1/2 stick cinnamon
1/2 lemon, sliced

Soak watermelon cubes in salted water (1/4 cup to quart of water). Drain, cover with fresh water and bring to a boil. Cook over low heat until tender. Drain, combine sugar, vinegar and water. Tie spices and lemon in a bag and add to sugar mixture. Bring to a boil stirring and boil for 5 minutes. Add melon and simmer until cubes are transparent, about 20 minutes. Remove spice bag. Pack into hot jars.
