PECAN PRALINES 
1 tsp. baking soda
1 c. buttermilk
2 c. sugar
1 tsp. vanilla
2 tbsp. butter
1 1/2 c. pecan pieces

Mix soda and buttermilk together in a large saucepan. Stir in sugar. Bring to a boil over medium heat, stirring occasionally. Cool until candy thermometer reaches 236 degrees or until a small amount of candy dropped in cold water forms a soft ball.

Remove saucepan from heat; add vanilla and butter. Beat until somewhat thickened but not until it loses its gloss. Add pecans. Drop by tablespoonfuls onto a greased, flat surface or waxed paper. Yield: 14 pralines.
