ITALIAN SAUSAGE & POTATO | |
1 onion 5 potatoes (2 lb.) 2 green peppers 3 cloves garlic, minced 1/2 tsp. salt 1/4 tsp. dried basil leaves 1/4 tsp. dried oregano Dash each of black pepper and red pepper flakes 2 tbsp. extra virgin olive oil 6 sweet or hot Italian sausage (about 1 lb.) 1/2 c. water Preheat oven to 350°F. Thinly slice onion. Pare potatoes and slice thinly (1/4-inch thick). Layer potato and onion in bottom of greased casserole. Note: If the potatoes aren't sliced to 1/4-inch thickness, they will take longer than the sausages to cook. Wash green peppers; remove seeds and cores, then cut into rings. Arrange on top. Minced garlic and add it to the olive oil along with the herbs. Sprinkle lightly with salt and pepper. Pour olive oil and 1/2 cup water over the pepper. Arrange sausage on top. Cover tightly with foil. Bake for 1 hour or until potato is tender. Remove foil; bake for 30 minutes longer, or until sausage is browned. Makes 6 servings. |
