FRIED RICE | |
1 egg 2 tbsp. soy sauce 1/8 tsp. pepper 3 tbsp. cooking oil 1 clove garlic 1 tsp. ground ginger 3 c. cold cooked rice 4 green onions, sliced 2 c. cubed cooked chicken 1 (8 oz.) can peas 1 1/2 c. chopped cooked broccoli 1/4 c. peanuts (optional) In small bowl, beat egg with fork. Stir in soy sauce and pepper. Set aside. Heat wok over high heat and add oil. Stir fry garlic and ginger in hot oil 30 seconds. Add rice and onions. Stir fry 5 minutes. Stir in cooked meat, vegetables, and nuts. Cook, stirring often, for 6-8 minutes. Drizzle egg mixture over rice mixture, stirring constantly about 1 minute or until egg is set. Pass additional soy sauce, if desired. |
