CREAM CHEESE MINTS 
8 oz. cream cheese, room temperature
6 2/3 cups powdered sugar, sifted
1 tsp. flavoring
Color, desired
Granulated sugar

Mash cheese. Add flavor and color. Then mix in powdered sugar, finally kneading with hands like dough. Roll into balls the size of marbles. Place one side in a small amount of sugar (granulated), press sugared side down in the mold. Unmold at once onto waxed paper by pushing in on back side of mold. Yield 9 to 10 dozen, depending on mold size.
