BUTTERMILK BISCUITS 
2 1/2 c. self-rising flour
1 tsp. salt
3 tbsp. shortening
7/8 c. buttermilk

Preheat oven 500 degrees. Sift 1 1/2 cups flour and salt together. Cut in shortening. Add buttermilk all at once. Mix with fork until dough holds together. Put remaining flour in another bowl. Flour hands, pull off enough dough for one biscuit. Roll dough lightly in the flour. Then roll into a smooth ball in palm of hands. Place biscuits on greased pan. Pat lightly to flatten. Bake 8-10 minutes.
