CURRIED CHICKEN SALAD 
2 (6 oz.) cooked chicken breasts, skin and bones removed
1 crisp green apple, chunked
3 ribs celery, chopped
1/2 c. low calorie mayonnaise
1 tbsp. vinegar
1 tbsp. finely chopped onion
1 tsp. curry powder
1 tsp. lemon juice
Salt and pepper to taste

Mix the mayonnaise with vinegar, onion, curry powder, lemon juice, salt and pepper. Chunk the chicken and mix with the remaining ingredients. Serves 2 people.
