THYME, ONION AND CHIVES MUFFINS 
1 1/2 c. all purpose flour
1/2 c. whole wheat flour
1 tbsp. baking powder
1/2 tsp. salt
2 t. fresh, or 3/4 teaspoon dried thyme
1/4 c. fresh or 1 1/3 tablespoon dried chives
1/2 c. onions, finely chopped
1/2 c. butter, melted
1 egg
1 c. milk

In a large bowl, combine flours, baking powder, salt, thyme, onion, and chives. In a separate bowl mix the butter, egg and milk. Add the liquid ingredients to the dry, stirring only until the dry ingredients are moist. DO NOT OVER MIX! Spoon the batter into well oiled or paper lined muffin cups.

Bake for about 20 minutes at 375°F or until a toothpick inserted in the center comes clean.
