EASY CHICKEN 'N DUMPLINGS
1 lb. boneless, cooked chicken (or any chicken pieces)
4 c. chicken broth
1 (10 count) can biscuits
1 tsp. poultry seasoning
1 tsp. parsley
Salt and pepper to taste

Bring skinless chicken (breast and thigh meat pieces are best) to boil in 4 cups water. Add seasonings, cover and simmer until meat is white (approximately 1 hour). Remove chicken to platter to cool. (Strain broth; if chicken not boned.) Remove meat from bone and place into broth. Simmer on low while adding 1 inch torn pieces of biscuit dough into chicken and broth. After all dough is added, bring to boil, stirring constantly, then cover and place on low heat for 10-15 minutes or until thickened.
