AVOCADO AND TOMATO SALAD 
1 large avocado, peeled and sliced
1 lb. plum tomatoes, sliced
1 medium yellow onion, sliced
cider vinegar and olive oil to taste
2 tsp. salt
2 tsp. black pepper
dash of hot sauce (optional)

Combine all of the ingredients in a non-reactive bowl.

Variation: For an interesting twist, add a papaya, peeled and diced. You can also substitute a red onion for the yellow.
