KELLY'S DIVINE POTATO SALAD! | |
8 potatoes (diced, cooked and allowed to cool) 2 small onions (finely diced) 6 eggs (hard boiled and cooled) 1 cup celery, finely diced 1/2 (16 oz.) bag frozen corn kernels (thawed) 4 rashers bacon (cooked and finely diced) 1 tsp. garlic powder 1/2 tsp. chopped parsley 1/2 tsp. chopped dried chives 1 1/2 cups coleslaw dressing (or mayonnaise) salt and pepper, to taste Prepare potatoes. Boil eggs. Fry bacon. Mix all ingredients in a large bowl and cover. Refrigerate. When cool eat as a delicious side dish to barbecued meat! Submitted by: Kelly Bradshaw |
