FRESH APPLE WALNUT BUTTER CAKE 
1 c. butter
2 c. sugar
3 eggs
3 c. sifted flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/8 tsp. nutmeg
2 tsp. vanilla
3 c. peeled, chopped apples
2 c. chopped walnuts

In a large bowl, beat the butter and sugar until well combined. Add the eggs, one at a time, beating well after each addition. Gradually add the sifted flour, baking soda, salt, cinnamon and nutmeg. Batter will be very dry and sticky. Stir in vanilla. Fold in chopped apples and walnuts.

Pour into greased and floured tube pan. Bake in moderately slow oven until cake tester inserted in cake comes away clean. Bake in 325 degree oven for 1 1/2 hours in a 9 or 10 inch tube pan. Remove to rack. Let stand 15 minutes. Put on plate.
