PEACH CREAM PUDDING 
2 tbsp. cornstarch
1/2 c. milk
1 1/2 c. scalded milk
1/2 c. sugar
1/4 tsp. salt
2 eggs, separated
1 tbsp. butter
4 tbsp. sugar
1 c. sliced canned peaches, drained

mix cornstarch with 1/2 cup milk, add to scalded milk together with sugar and salt. Cook 10 minutes and add beaten egg yolks. Cook until thick. Remove from heat. Cool slightly. Make meringue from egg whites, add the 4 tablespoons sugar. Fold into pudding. Pour over peaches. Can be served with whipped cream.
