BANANA-WALNUT BREAD 
2/3 c. sugar
1 tsp. lemon juice
3 oz. butter (3/4 stick)
1 1/4 c. mashed banana
2 eggs
1 c. shelled walnuts
1 1/3 c. flour
1/4 tsp. salt
1 tsp. baking soda
3/4 tsp. baking powder

Preheat oven to 350 degrees. Butter and flour a loaf pan that holds at least 5 cups. Put sugar, lemon juice and butter in a bowl. Mix. Add banana, eggs, walnuts; mix well. Stir in flour, salt, baking soda and powder and mix well until flour disappears. Transfer the batter to the loaf pan and bake in the preheated oven until a toothpick in center comes out clean, about 1 hour. Makes 1 cake. You may double this recipe.
