SCRAMBLED EGGS WITH LOX 
12 large eggs
1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons butter
8 oz pkg well chilled cream cheese, in 1/2" cubes
6 oz thinly sliced smoked salmon or lox bits in 1/2" pieces
chopped fresh chives or scallions (optional)

Melt butter in large skillet over medium-high heat. Add eggs.

Stir until eggs are almost set, about 5 minutes. Gently fold in cream cheese and salmon; stir just until eggs are set, about 1 or 2 minutes.

Transfer eggs to a warm serving dish. Sprinkle with chives or scallions, if desired, and serve.
