FRIED FISH 
1 lb. perch filets
1 c. buttermilk
1 c. flour
1 c. pancake mix
1 c. beer

Put frozen fillets in buttermilk and soak 1 hour. Drain on paper towels. Roll fillets in dry flour. Mix pancake mix and beer to make thin batter. Dip fillets in batter; drain and deep fry in hot oil.
