PINEAPPLE UPSIDE DOWN CAKE 
1/2 c. butter
1 c. sugar
2 eggs
2 c. cake flour
3 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
3/4 c. cold water
1 c. brown sugar
1/4 c. butter
5 slices pineapple
5 maraschino cherries

Cream butter; add sugar; beat. Add eggs, one at a time; beat well. Sift flour, baking powder and salt together. Add vanilla to water. Alternately add dry and liquid ingredients; blend until smooth. Grease 10 inch pot; sprinkle with brown sugar; dot with remaining 1/4 cup butter.

Arrange pineapple slices in pan; place cherry in center of each slice. Spread cake batter over pineapple. Bake 45 minutes in 350 degree oven. Allow to stand 5 minutes, turn cake upside down on platter.
