PINEAPPLE ORANGE CARROT MOLD 
1 tbsp. unflavored gelatin
1 c. orange juice
Sweetener to equal 4 tbsp. sugar
1/8 tsp. salt
1/4 tsp. coconut extract
1 tbsp. lemon juice
4 oz. sliced raw carrots
1 c. crushed pineapple with juice

Sprinkle gelatin over 1/4 cup orange juice in blender. Heat remaining 3/4 cup orange juice and pour mixture in blender. Blend until smooth. Add sweetener, salt, lemon juice, and carrots and run at medium speed 60 seconds. Pour into bowl and add pineapple and coconut extract. Pour into mold and refrigerate until set.
