ARROZ CON POLLOS 
6 to 8 pieces chicken (thighs or drumsticks)
1 can tomato paste
1 lg. onion, cut into sm. pieces)
2 cloves garlic, cut into sm. pieces
1/2 lg. green pepper, cut into sm. pieces
1/4 lb. salt pork, cut into sm. pieces
2 tbsp. olive oil
1 tsp. crushed red pepper
1 tsp. cumin
1 tsp. salt
1 1/2 c. rice, white whole grain
2 1/2 c. water

Place oil, onions, garlic, green pepper, salt pork and chicken in deep pot. Saute until chicken is browned. Then add tomato paste and 2 1/2 cups water. Bring to boil. Add rice, crushed pepper, salt and cumin. Cover and simmer, medium heat, until rice is cooked. Serve with Spanish olives on the side. Serves 5 to 6.
