FRIED FISH 
2 lb. fillets, steaks or pan dressed fish
1 tbsp. milk or water
1/8 tsp. pepper
1/8 tsp. salt
1 egg, slightly beaten
1 c. bread crumbs
16 oz. fat or shortening

Cut into serving size portions. Sprinkle both sides with salt and pepper. Beat egg and blend in the milk. Dip fish in the egg and roll in crumbs.

Place fish in heavy skillet which contains about 1/8 inch melted fat or shortening which is not but not smoking. Fry at medium or medium high setting. When fish is brown on one side, turn carefully and brown other side. Cooking time is about 10 minutes depending on the thickness of the fish. Drain on paper toweling. Serve at once on a hot platter, plain or with a sauce. Makes 6 servings.
