SALMON LOAF 
1 lg. can salmon
1 lg. egg or 1/2 c. egg beaters
2 tbsp. mayonnaise or non-fat yogurt
Salt & pepper to taste
12 stuffed olives, chopped
1 sm. onion, chopped
Cracker or bread crumbs

Regular or no cholesterol using egg beaters and yogurt.

In bowl place salmon (do not drain). With fork break meat apart, but not too fine, crush spice bone and remove any skin. Mix in egg, mayonnaise, salt, pepper, olives and onion. Add enough bread or cracker crumbs to take up moisture. Spray fish fold or loaf pan with nonfat vegetable cooking spray. Bake at 325 degrees for 35-40 minutes.
