COCONUT CREAM CAKE | |
2 c. sugar 1/2 c. (1 stick) butter, softened 1/2 c. solid Crisco 5 egg yolks 2 c. all-purpose flour 1 c. buttermilk 1 tsp. baking soda, mixed with buttermilk 2 c. coconut 1/2 c. chopped pecans 1 tsp. vanilla 5 beaten egg whites Cream together sugar, butter and Crisco. Add egg yolks, flour, buttermilk mixed with baking soda, coconut, pecans and vanilla. Fold in beaten egg whites. Bake at 350°F in three 9-inch greased and floured cake pans. Frosting: 1 (8 oz.) pkg. cream cheese 1/2 c. (1 stick) butter 1 (1 lb.) box confectioners sugar 1 tsp. vanilla Beat together. |
