SHERRIED BROILED TOMATOES 
4 lg. tomatoes (ripe but firm)
1/4 c. dry sherry
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. dried oregano
8 tbsp. mayonnaise
1/4 c. Parmesan cheese

Preheat oven to 300 degrees. Cut tomatoes in half; place in shallow baking dish, cut side up, and prick with fork. Sprinkle with sherry, allowing it to be absorbed into the pulp. Sprinkle with salt and pepper and oregano. Place in oven for about 5 minutes. Remove from oven and turn heat to broil. Top tomatoes with mayonnaise and dust with Parmesan cheese. Broil until light brown and serve immediately.
