SPRINGERLE (CHRISTMAS COOKIES) 
4 eggs
1 lb. powdered sugar
1/4 tsp. anise oil
4 tbsp. butter, melted
3 1/2 c. flour
1 tsp. baking powder

Beat egg whites and add yolks, one at a time. Beat until very light, about 20 to 25 minutes. Gradually add powdered sugar. Add anise oil and melted butter. Gradually add flour (may need to add more). Add baking powder to first cup of flour. Roll dough about 1/2 inch thick. Cut out cookies. Cover and let stand overnight. Bake at 350 degrees until VERY light brown - 7 to 10 minutes. Do not overbake. Best if baked a month or so before Christmas and placed in freezer.
