MICROWAVE BLUEBERRY MUFFINS 
1 3/4 c. flour
1/3 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
1 c. fresh or frozen blueberries
3/4 c. milk
1 egg
1/3 c. melted butter

Combine flour, sugar, baking powder and salt. Add blueberries. Add milk, melted butter and egg. Mix until dry ingredients are just moistened. Spoon batter into paper-lined micro-safe baking or cupcake pan. Fill 2/3 full. Microwave at medium high for 3 minutes. Let rest 3 minutes. Microwave at high for 2 to 3 minutes or until done. Let rest in pan a couple of minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
