MINT MERINGUES 
2 egg whites
3/4 c. sugar
6 oz. milk chocolate chips
1/2 tsp. mint extract
1 pinch cream of tartar

Preheat oven to 375 degrees. Beat egg whites, cream of tartar and the extract until foamy. Stir in sugar and beat until whites peak. Fold in chocolate chips. Drop by teaspoonfuls onto ungreased cookie sheets. Put cookie sheets in the oven and turn off the heat. 48 cookies ready in the A.M.
