SWEET AND SOUR CHICKEN 
1 fryer chicken, cut up or 10 chicken thighs
8 oz. bottle Russian dressing
10 oz. jar apricot preserves
About 1/3 env. dry onion soup mix

Bake chicken uncovered in a shallow pan for 60 minutes at 350 degrees. Meanwhile, combine and heat the rest of the ingredients. Remove chicken pieces and discard juices. Bake chicken topped with sauce for 30 additional minutes. Serve over rice. Serves 4-6.
