ZUCCHINI CRISP 
5 c. zucchini, peeled, cut up like apples
2 c. sugar
1 tsp. cinnamon
1/4 c. lemon juice
3/4 c. water
6 tbsp. butter
1 c. flour
1/2 c. brown sugar
1/2 tsp. salt

Cook first 6 ingredients 10 minutes; put into 9-inch pan. Mix remaining 4 ingredients until crumbly. Sprinkle over zucchini and bake at 350 degrees for 45 minutes. Serve warm, topped with whipped cream.
