ZUCCHINI APPLE CRISP 
8 c. zucchini, peeled and diced
1 c. sugar
2/3 c. lemon juice
1 tsp. cinnamon

Cook until tender.

CRUST:

4 c. flour
1 1/2 c. sugar
3 sticks butter

Blend ingredients for crust like a pie crust. Press in a greased 9 x 13 inch pan 1/2 of the mixture. Bake at 350 degrees for 10 minutes. Pour hot zucchini mixture over the crust. Crumble remaining crust mixture on top of zucchini. Bake for 45 minutes.
