10 slices non-too-fresh white bread, crusts removed 3 tbsp. milk 1 1/2 lbs. fresh or frozen, soft fruit (raspberries, strawberries, or cherries) 1/2 c. sugar if using fresh fruit Lightly oil a bowl and line with slices of bread after moistening with milk, reserving a few slices of bread for top. Mix fruit and mash well. Add sugar, if using fresh fruit. Fresh fruit may be cooked about 4-5 minutes to soften. Reserve fruit juice. Pour fruit into bread-lined bowl. Top with remaining bread, cutting slices to fit. Place a plate inside top of bowl and weight down with heavy object. Refrigerate overnight. Unmold onto serving dish. If any of bread appears dry, spoon a small amount of reserved juice over. Decorate with fresh fruit and serve with topping of choice. |
