SALTED & ROASTED PUMPKIN SEEDS 
Jack-O-Lantern (pumpkin)
Salt

Clean and wash seeds from pumpkin, removing strings and all orange bits. An easy way to do this is to place the seeds in water in the bowl of a large electric mixer, then let it run on slow until the seeds are clean; rinse.

Soak 1/2 hour in very salty water. Layer the still wet seeds in a pan, then sprinkle heavily with kosher or table salt. Add another layer, then cover with more salt; continue until done. Leave in a cool place for several days, then spread on cookie sheet. Dust off any salt chunks.

Sprinkle lightly with salt or use salty water. Bake at 275°F for 3 to 4 hours. Stir once in a while.

Salty water = 1 cup table salt to 3 cups water.
