SZECHUAN CHICKEN 
2 whole chicken breasts
3 tbsp. cornstarch
1 tbsp. vegetable oil
3 cloves garlic, minced
5 tbsp. soy sauce
1 1/2 tbsp. white wine vinegar
1 tsp. sugar
1/4 c. water
1 bunch green onions, cut into 1-inch pieces
1/8 to 1/4 tsp. cayenne pepper

Split chicken breast in half; skin and debone. Cut into 1 1/2-inch cubes. Put cornstarch in paper bag or plastic baggie. Add chicken pieces and toss lightly to coat. Heat oil in electric frying pan. Add chicken and garlic. Stir-fry at 375°F until chicken is lightly brown. Add soy sauce, vinegar, sugar and water to skillet. Cover and cook 3 minutes at 250°F or until chicken is cooked through. Uncover skillet; add green onions and cayenne pepper. Heat 2 minutes longer and enjoy.
