WHIPPED CREAM SALAD 
1 pkg. gelatin (plain Knox)
1 c. water
1 c. crushed pineapple (sm. can and juice)
Juice of one lemon
3/4 c. sugar
1/4 c. grated Velveeta or American cheese
1 c. whipping cream, whipped
1 c. chopped pecans

Soak gelatin in water. Boil pineapple, lemon juice and sugar together; bring only to boiling point. Pour this over gelatin.

Put in refrigerator and when it begins to set, add cheese, whipped cream and nuts. Chill. When ready to serve, decorate top with sliced pineapple and cherries.
